Here is a recipe for some no bake creamy cocoa balls. I rolled them into oats for the outer layer but slivered almonds would work too! They are rich and delicious.
Ingredients:
1/2 cup cocoa powder
1/4 cup pb2 or whey protein powder (vanilla or cocoa)
2 Tablespoons chia seeds
2 teaspoons vanilla extract
2 Tablespoons of monk fruit (or Stevia drops to taste)
Unsweetened vanilla almond milk
About 2/3 cup oats (to cover the outside.)
Add a splash and mix until desired consistency. You want them to hold together. They may be slightly sticky. I used a spoon to form into imperfect balls and rolled the outside into oats. This makes a nice pad for them to lay on in your plate without sticking.
Calories and macros based on recipe with Whey protein instead of pb2.
If you eat the whole thing: Calories: 585, Fat 23 grams, Carbs 66 grams, Protein 46 grams and 26 grams of fiber.
Half recipe: Calories: 253, Fat 10 grams, Carbs 33 grams, Protein 23 grams, Fiber 13 grams.
1/4 of the recipe or 4 servings: Calories: 127, Fat 5 grams, Carbs 17 grams, Protein 10 grams, Fiber 6 grams.
